Heart shaped pancakes

Ingredients

For the compote

150g frozen mixed berries

1½ tbsp icing sugar, plus extra for dusting

½ tsp vanilla bean paste

½ orange, zested and juiced

For the pancakes

1 tsp baking powder

155g pancake shaker mix

pink food colour gel

20g butter, cubed

Method

  1. Tip the frozen berries, icing sugar, vanilla bean paste and orange into a small saucepan and bring to boil. Reduce to a simmer and cook for 10 minutes until syrupy.
  2. Add baking powder to the pancake shaker mix, reseal and shake to mix. Pour 180ml of water and some pink food gel into the mix, reseal and shake again until smooth. 
  3. Add butter to a large pan and pour the batter in to create 8cm pancakes. Cook for 1-2 minutes until you see bubbles. Flip over and cook for a further 1-2 minutes.
  4. Cut the pancakes into hearts using a heart shaped cookie cutter. Stack on a plate and drizzle with your compote and icing sugar.
